hello guy`s finely they are startting to sale cat fish in the store`s near here.
got a question for you all ? what are your faverite way`s of prepareing ( cooking ) i have just fried it any sugjestions for other way`s of cooking it ? |

When you say fried do you mean pan fried or beer battered and deep fried? Tony

well tnienaber i have just generaly roll the felelt in corn meal and fry it

Filets or whole body sans head? I buy the whole body version (cheaper, looks better to tourons), and make 2, small, peeled, green stick grills. I "sandwich" the fish between the two grills, and let it cook over a slow fire. One grill rest on top, while the one on the bottom supports the fish. As the fish cooks it starts to come away from the bones, so when you pinch the fish between the grills, and flip it over to the opposite side to cook, nothing falls off. Remove and eat when the flesh is firm and comes off the bones.

Take one or more med size cat fishes...bone or fillet them...take sheet of heavy duty tin foil...coat tin foil with olive oul or crisco...make a pocket in the foil for the fish, insert fish skin side down and totally seal up foil with a rolled edge... and bake in oven about 350 for maybe 20~25min till flaky done...
mean while...boil up a double pot of Zatarans type gumbo...(or make your own? but boxed is super easy...)I add a tea spoon or two of crushed red "pizza topping" type pepper to the boil...gives it some serious kick...ummm ummm. but any dried cayenne should do the same. When fish are done, flake apart and add to the cat fish..most of the skin sticks to the foil, but you can add it too if it doesnt... simmer them together awhils on a low heat...cool...and dip up a bowl full... a skillet pan of good corn bread and a side of sorgham molasses with butter and you are set... dang, now Im hungry for it myself... when I was a kid we used to catch 10>20 pounders, cut em 'cross-ways' into steaks, dredge in spiced up corn meal, fry in HOT bacon grease.. now I catch lil bullheads and just smoke em... yummy... I dont like store bought cats, theyre too 'mushy'
