"Uncooked" bacon is all she can eat. Dietrich's doesn't use nitrites in curing their bacon.

I'll admit to using a modern dehydrator, but I use a good roast sliced thin with little or no salt. It tastes fabulous.

I'm not sure I'm up to making salt pork though. Guess I'll have to resort to asking the butcher or trying one of the places you guys have suggested.
