I think I've been using those strokes, only I didn't know what to call them, and I wasn't using them on every stroke --- I'd just wait until I needed to 'catch up', so to speak, hence the zig-zagging. The idee of doing them most every time makes a lot of sense, even to a 'canoe flatlander', like me.

Nah, 'Crow, my Buffalo River is in north Arkansas. Your PA is one of my favorite states, though. Didn't know they had a Buffalo, too. No wonder I like the place! Howsomever, the canoe will be putting me at the lake quite a bit of my time, now. Opens a whole nuther territory to explore and write about! Yeeeehaaaaw!
